Green Cupcakes for St. Patrick's Day

Cupcakes make wonderful party goodies or handy lunch bag desserts! Cupcakes are also the perfect treats for your kids to take to school to share with classmates.

Make cupcake decorations using the free shamrock clipart, printed on blank business cards. Make your favorite white
cake (I used a Betty Crocker box mix). You'll need green food dye (I
prefer the gel food dye over liquid food dye). Put cupcake papers into a cupcake/muffin pan. Be sure to look for St. Patrick's Day cupcake papers at your local market or dollar store! Put some food dye into the cake batter. |

Blend in the food dye and keep adding it until you get the shade of green that you like. | ||

Put the green cake batter
into the cupcake papers---fill about 2/3 full. Following the instructions that come with your cake mix/recipe, heat the oven and bake. Remember that cupcakes will bake more quickly than a whole cake, so you'll want to check the cupcakes after about 15 minutes, and then keep checking every 5 minutes or so. Remove from oven when done, and allows to cool. |

Now you are ready to
decorate the cupcakes! You'll need your favorite frosting (be sure to use vanilla if you want to dye it green), the decoration cards (your own creations or the free cards that accompany this article), popsicle sticks, and a glue stick. As you can see here, I've separated the individual cards. You will need two cards for each cupcake. |

Put one card face down on
the counter (or other work surface). Rub the glue stick over the entire
card. Press the popsicle stick onto the card as shown here (so that there is some white of the card showing above the top of the stick). Rub glue on the back of the second card and then glue the two cards together, capturing the popsicle stick in between them. Push the popsicle stick down into the cupcake. These simply decorated cupcakes can make a festive addition to a St. Patrick's Day party or can be used as a "take to school" treat. And don't forget to make a batch to share with your co-workers! |
