Chocolate Easter Cupcakes

Here's an idea for
something for the Easter Egg basket that isn't candy: Chocolate-Covered
Easter Cupcakes! These cupcakes also make a nice treat for your son or daughter to take to school to share with classmates, or for you to take to work to share with co-workers. Cupcakes are easy to handle---and definitely help to limit portions! Use your favorite chocolate cake recipe (from scratch or boxed mix). Follow the recipe as you would normally, there's no need to make any adjustments. I found these Easter-decorated cupcake papers at my local dollar store. |

Step 1. Fill the cupcake papers about 1/2 to 2/3 full. Do not overfill. Bake at the temperature called for by your cake recipe. Cupcakes usually don't take as long to bake as a whole cake, so you'll want to check for doneness after about 15 minutes. After that, check at 3-5 minute intervals and take the cupcakes out of the oven as soon as your cake tester (or toothpick) comes out clean. It is very easy to overbake cupcakes. I recommend that you rotate the cupcake pans at least once during baking to ensure even baking. No oven really bakes evenly, so move the pans from top to bottom and turn from front to back. |

Step 2. While the cupcakes are cooling, you can get the coconut topping prepared. The coconut topping will look like Easter grass. Divide the coconut into three small bowls, and select three colors of food dye. |

Step 3. Add in some food dye, and mix with a fork. Continue to blend until all the coconut is colored. You may need to add in more food color to achieve the color that you want. |

Step 4.
After the cupcakes are completely cooled, they are ready to be frosted and then topped with colored coconut. |

Step 5. I used vanilla frosting so that the colored coconut would show up nicely. |

Step 6. Now, the cupcakes are ready to eat! You can simply put them in an Easter basket and use as a table decoration, or to transport them to school or work. |

Step 7.
As an alternative, you can put the cupcakes into plastic "goodie" bags. I found these decorative Easter bags at my local dollar store. In order to make bagging the cupcakes a little easier, I put the cupcakes in the refrigerator for an hour to harden the frosting. That made the cupcakes easier to handle while I put them into the bags. This concludes the tutorial for Chocolate Easter Cupcakes. |
